Sweet Potato Brownies
Ingredients
4 tbsp cacao powder or carob
3 eggs
3 tbsp coconut flour
3 tbsp of coconut sugar (you can add more for a sweeter brownie)
1 large or medium sweet potato (diced up and cooked until soft in boiling water)
3 tbsp coconut oil
3 tbsp butter*
1/2 tsp bicarbonate soda
1/2 tsp sea salt
1/4 tsp cinnamon
Method
- Pre heat the oven to 180 degrees and line baking tray 15 x 10cm (or so) with baking paper
- Dice up sweet potato (you can peel it if you would like) and boil on the stove in a saucepan
- Cook sweet potato until soft, drain and add to your blender
- Blend the sweet potato, butter and coconut oil in a blender until smooth
- Whisk the other ingredients in a bowl and then stir through the sweet potato mixture
- Pour mixture into prepared baking tray
- Bake at 180 degrees for 20 - 30 minutes until cooked
Note: you can grate the sweet potato into the brownie mixture if you can't be bothered to boil it and blend it however I do believe it is yummier when blended!
*You can substitute a nut butter in or more coconut oil in replacement for the butter but I definitely think the butter helps to make the consistency of these brownies... if you have trouble with lactose you shouldn't have to many dramas with butter and if you are slightly intolerant to dairy in general try ghee (clarified butter) and see how you go!
