Mexican Chicken & Slaw
Crap Free Mexican Chicken & Coleslaw 😏 recipe below!
This is SOO SOO good. The taco seasoning is one Shan and I always make at workshops because it’s one of those recipes that is so versatile and so much better homemade than store bought. No shitty additives, preservatives, mostly just sugar, flavourings etc. Let me know if you make it!
Crap free taco seasoning..
3 tsp cumin
2 tsp chilli powder (optional)
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp paprika sweet
1 tsp paprika smoked
2 tsp salt
1 tsp coriander (optional for all the haters)
Mix it all together. I usually make a big batch and store in the cupboard so it’s ready when you need it.
The seasoning works a treat with shredded chicken, taco boats or mince stuffed in baked sweet potatoes.
Chicken…
Add seasoning and a couple of tablespoons of olive oil to a bowl and coat the chicken. You can leave it to marinate in the fridge for 30 mins to 2hrs if you wish for a stronger flavour. You can also add some fresh minced garlic 🧄
Heat some oil in a fry pan and cook approx 8 mins on either side. Then set aside to rest.
Slaw…
Chop all the below and toss in a bowl

Cabbage
Carrot 🥕
Cucumber 🥒
Spinach or leafy greens
Capsicum would be good or extra herbs like parsley
I always top with a mix of sunflower and pepita seeds (usually toasted I pop them on the fry pan to heat after the chicken is cooked they don’t take long)
Dressing…
I used some @gevityrx mayo, lime juice, a little apple cider vinegar for tang and salt/pepper … a little Dijon mustard is also nice! I have used some @pure_n_free natural coconut yoghurt before if out of mayo it has a great sour unsweet flavour 🤤
