Banana 🍌 Choc Chip 🍫 Muffins


Well basically we’re in lock down, we had bananas and so here we are jumping on the bandwagon. I haven’t met many paleo banana breads I like so this is a first. OK sooo let’s get something straight here. I’ve only made this recipe once and it worked so no it hasn’t been trialled and tested 47 times for perfection. It’s a bloody fingers crossed it works for you situation 🤞🏽 but really it’s got choc chips in it so if it all turns to sh*t I’ve never eaten a bad choc chip just saying... I will remake again today but you impatient buggers wanted it sooner so you’re on your own. Good luck 😉 whilst baking it looks a little oily on the outside which I find helps to prevent sticking and also crisp up the outside of the muffins so relax it’ll sort itself out.


Here’s the 4-1-1...

30 mins cook time

(really anywhere between 25-35 mins depending on crispy-ness around the top)

170 degrees

12 muffins


Ingredients:

2 large bananas

3 eggs

1 1/2 cups almond meal

1/2 cup tapioca flour

1/2 cup coconut oil (you can use any oil)

1/2 cup maple or honey

1 tsp baking powder

Spices ... I used 1 tsp cinnamon, 1/2 tsp ginger 1/2 tsp nutmeg


Mix through 1/3 cup choc chips or nuts of your choosing at the end


Pre heat oven 170. I used my food processor to blitz the bananas first and then added the rest of the ingredients in and used the stir function to combine them (not to over beat the eggs etc) and then I stirred in the choc chips or nuts. Poured into muffin trays (silicone aren’t low tox but avoid muffin removal fuckery) otherwise use muffin cups in a tray and bake for 30 mins.
