Choc Coconut Muffins

Choc PB Muffin Recipe below 🀀 A little weekend pyjama baking going down #myfavourite & also heading to our favourite @threeblueducks for lunch today which is now open in Brisbane πŸ™ŒπŸ½ I have only made these muffins twice so I haven’t perfected the recipe yet but it surely does work (Tom and I have already eaten them all if that’s a convincing sign) so here it is in the meantime until I do a few more trials and put it on the website πŸ˜‰



1/4 cup coconut flour

1/3 cup dark chocolate melted

4 eggs

3 tbsp honey

1/4 cup coconut or macadamia oil

1/4 cup nut milk

1/4 cup peanut butter (optional)

1 tsp baking powder (gf)



1. Preheat oven to 160’C and line muffin tray

2. Melt choc and combine all ingredients in a bowl 🍫πŸ₯š

3. Pour batter into patty cake cups.

4. Bake 160’C for 25-30 minutes 🀀

5. This batter made 9 so just increase for more 🀀



OR

Instead of coconut flour sub in 2 cups almond meal & 2 eggs instead of 4 😏

NOTE: the PB makes the muffins a little more dense yet delicious!
