Choc Coconut Muffins
Choc PB Muffin Recipe below π€€ A little weekend pyjama baking going down #myfavourite & also heading to our favourite @threeblueducks for lunch today which is now open in Brisbane ππ½ I have only made these muffins twice so I havenβt perfected the recipe yet but it surely does work (Tom and I have already eaten them all if thatβs a convincing sign) so here it is in the meantime until I do a few more trials and put it on the website π
1/4 cup coconut flour
1/3 cup dark chocolate melted
4 eggs
3 tbsp honey
1/4 cup coconut or macadamia oil
1/4 cup nut milk
1/4 cup peanut butter (optional)
1 tsp baking powder (gf)
1. Preheat oven to 160βC and line muffin tray
2. Melt choc and combine all ingredients in a bowl π«π₯
3. Pour batter into patty cake cups.
4. Bake 160βC for 25-30 minutes π€€
5. This batter made 9 so just increase for more π€€
OR
Instead of coconut flour sub in 2 cups almond meal & 2 eggs instead of 4 π
NOTE: the PB makes the muffins a little more dense yet delicious!
