Fruit & Nut Loaf (df, gf & rsf)


Holy heck. I made this fruit & nut loaf today. I’m obsessed. I monstered nearly half the loaf so this is the only pic I have … recipe below.


There’s this soul loaf recipe I’ve made for ages from a health retreat I go to and have worked at and it’s what I planned to make but had half of the ingredients so this is what we ended up with and I have no regrets.


2 cups almond meal

1/2 cup desiccated coconut

200g nuts/seeds/fruit

(I did a mix of goji, sunflower seeds, pepita seeds, hemp seeds & dried apricots)

5 eggs

1 apple (blended, core removed)

110g coconut oil or macadamia/avocado oil

50g maple or honey

1 tsp baking powder

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

Sprinkle of salt


Preheat oven 160 degrees & line a loaf tin

Mix all the dry ingredients together until well combined

Blend the apple

Then mix through the apple and the rest of the wet ingredients

Pour/spoon into your loaf tin

Bake for 45 mins


Make sure the coconut oil is liquid when making

& I wouldn’t recommend adding any seeds that expand like chia could change the loaf consistency
